    I have to ask... what the heck do you do with sweet potato greens? I always end up stumped.

  2. Yeah, I am so happy this is at my kids' school. It was the brainchild of one very cool mom who had the where withal to make it happen. I have a couple of recipes for sweet potato greens, but you can prepare them the same way you prepare any other type of green really. I have even used them in a salad in place of spinach. they have a very mild flavor and are easy to pair with many other flavors.
