  2. Is there no need for acid in this to be shelf stable?

    1. Sugar is a preservative. This is a canning method that's been used in my family for several generations with no problems. Home canning sparks some passionate opinions, and as with any home-canning recipe from any source, every one should do their homework if they are uncomfortable with the stability. Hope that helps. :-)
