Nice post -- a good idea of gathering some like-minded recipes. I'm a big fan of risotto, and an even bigger fan of butternut squash risotto, but have never used saffron in it. I'll try that next time.
Thanks, that recipe was loosely based on some that I had while in Greece at an Italian restaurant (lots of Italians on the islands there).
